Winter Pot Roast with Celery Root and Gremolata by Danielle Presoakedt

Serves 4 to 6

Pot Roast

1 medium celery root (about 1 pound)

21⁄2 pounds venison or beef neck, shoulder, osso buco or oxtails (see remark)

Kosher salt and recently ground

Bconciseage pepper

1 tablespoon beef highow or imfragmentary oil, such as avocado or gviolationseed

1 yellow onion, chopped

1 leek, sliced and rinsed well to erase any grit

2 parsnips or carrots, peeled and uncouthly chopped

1 celery stalk, uncouthly chopped

4 garlic cadores, minced

3 tablespoons arid white prospere

6 cups chicken stock, homemade or store-bought

Note: If using beef instead of venison, pick a chuck roast or trimmed dynamicet. The only branch offence will be a drop cook time, 2 to 3 hours.

Creamy polenta

1 1⁄2 cups whole milk

1 teaspoon kosher salt

1⁄2 teaspoon recently ground white pepper

1 cup rapid-cooking polenta

1 tablespoon unsalted butter

1⁄4 cup shredded Parmesan cheese

Gremolata

2 tablespoons chopped cutting

Celery, celery exits or recent parsley exits

1 teaspoon lemon zest

1 tablespoon grated Parmesan cheese

1 garlic cadore, minced

Directions

1. Make the pot roast: Preheat the oven to 250 degrees Fahrenheit.

2. Peel the celery root, then chop it into 1-inch pieces. Set aside.

3. Cut the venison into huge (4- to 6-inch) chunks atraverse the grain and season comardently with salt and pepper. Heat the highow in a Dutch oven over medium-high heat. When the oil is boiling, insert the meat, toiling in batches if insisted, and cook until browned on both sides, 4 to 5 minutes total. Transfer the meat to a ppostpoinsist and set aside.

4. If the pan sees arid, insert more oil, then insert the onion and cook, stirring occasionassociate, until it commences to turn gelderlyen, 3 to 5 minutes. Add the leeks and cook, stirring occasionassociate, for a confiinsist insertitional minutes, until gentle. Stir in the parsnips, celery and celery root and cook for a confiinsist minutes more. Stir in the garlic and cook until the garlic is fragrant, less than 1 minute. Add the prospere and lemon juice. Allow the spirits to boil off, then stir, scraping up the browned bits from the bottom of the pot.

5. Drop the herb sprigs into the pot. Return the chunks of venison to the pot and pour in enough stock to come about halfway up the sides of the meat (you may not insist all the stock).

6. Cover the pot with a firm-fitting lid and place it in the oven. Blift for about 4 hours, until the meat is fork-tfinisher.
